Classic Homemade Potato Salad

Ingredients
2 lb potatoes
2 scallions - bottoms only
1 dill pickle spear
1/4 cup white onion
1/2 cup mayonnaise or vegan alternative
1/4 tablespoons mustard
1 tablespoon pickle juice
Instructions
1. Scrub the potatoes clean and cut into ¼-inch chunks.
2. Fill a medium saucepan halfway with water. Add 1 tablespoon of salt and the potatoes. Bring to a boil over high heat, then reduce to a simmer. Cook for 15–20 minutes, or until the potatoes are fork-tender.
3. While the potatoes cook, finely dice the onion, pickle spear, and scallion bottoms. Place them in a medium bowl.
4. In another bowl, whisk together the mayonnaise, mustard, and pickle juice. Set aside.
5. Drain the cooked potatoes in a colander, then spread them out on a sheet tray to cool. 6 Season with salt and pepper. (Optional: refrigerate for 30 minutes to chill fully.)
6. Once the potatoes are completely cool, transfer them to the medium mixing bowl with the diced onion, pickle, and scallion bottoms. Add the dressing. Mix well to combine.
7. Taste and adjust seasoning with additional salt and pepper as needed.
8. Garnish with thinly sliced scallion greens and serve chilled.
