Thai-Inspired Crunchy Slaw with Creamy Peanut Lime Dressing
This vibrant slaw is packed with fresh veggies—cabbage, daikon, bell peppers, and carrots—tossed in a zesty peanut-lime dressing. It’s quick to prep and versatile enough to serve on its own, over rice with a protein, or tucked into a taco or wrap. Ready in just 20 minutes, it’s a flavorful go-to for any day of the week.

Serves: 2 as a main dish, 4 as a side
Ingredients
For the Salad:
3 cups shredded red or green cabbage, or a combo
1 daikon radish shredded, any radish will do or you can leave it out
2 cups of mixed bell pepper
1 cup carrots shredded
1/3 cup sliced green onions, chopped cilantro, sliced toasted peanuts
For the Dressing:
1/2 cup creamy peanut butter
1/4 cup lime juice
1 tsp toasted sesame oil, 1 tsp salt
2 tbsp soy sauce, 2 tbsp rice wine vinegar, 2 tbsp chopped cilantro
2 tbsp sriracha, 2 tbsp honey or maple syrup
Instructions
1. Combine all of the dressing ingredients in a blender and blend until smooth and creamy.
2. Add all of the cut salad ingredients to a large bowl. Drizzle your desired amount of the peanut dressing over the salad. You’ll probably have a bit leftover.. Toss the salad until well combined and coated in the dressing.
3. This salad is great by itself, served over rice with a protein, or used as a component in a taco or wrap!
