Crispy Seared Oyster Mushrooms with Lemon and Herbs

These oyster mushrooms shine with rich, meaty texture and deep umami flavor. Marinated in lemon and herbs, then seared until golden and crisp, they’re a savory, plant-based centerpiece or side that’s simple yet deeply satisfying.

Serves: 2-3

Ingredients:
½ lb oyster mushrooms, tough bottoms trimmed
½ lemon, zested and juiced
2 tbsp olive oil (plus more for searing)
1 tsp thyme, chopped
4 scallions, whites only - chopped (reserve greens for another use)
1 tsp salt
½ tsp pepper
½ tbsp garlic powder
½ tbsp onion powder
Salt and pepper, to taste


Instructions
1. Make the marinade: In a medium bowl, combine the lemon zest and juice, olive oil, thyme, scallion bottoms, garlic powder, and onion powder. Whisk to combine.
2. Marinate the mushrooms: Add the oyster mushrooms to the bowl and toss to coat evenly. Marinate for 30 minutes.
3. Sear the mushrooms: Heat a medium cast iron pan over medium-high heat. Add enough olive oil to coat the bottom. Remove mushrooms from the marinade and place in the hot pan with oil.
4. Optional: Place a second pan on top to press them down for an even sear. Cook for about 5 minutes per side, until browned.
5. Season and serve: Season with salt and pepper to taste. Serve immediately.
