Simple Green Beans Almondine Recipe
Bright, crisp, and elegant, this Simple Green Beans Almondine pairs tender blanched green beans with golden toasted almonds, delicate shallots, and a splash of fresh lemon juice. It’s a quick and flavorful side dish perfect for weeknight dinners or holiday tables alike.
Ingredients
1 lb green beans, bottoms and tops trimmed
2 tbsp sliced almonds
1 tbsp extra virgin olive oil
1 shallot, thinly sliced
1/2 tsp salt,
1 garlic clove, minced
1/2 tbsp fresh lemon juice
Pepper, to taste
Instructions
1. Prepare an ice bath: Fill a large bowl with ice and water; set it aside.
2. Bring a large pot of salted water to a boil. Add the green beans and cook for 2 minutes.
3. Drain the green beans and immediately transfer them to the ice bath to stop the cooking.
4. Once cool, drain again and pat dry with a clean towel.
5. Heat a dry cast-iron skillet or medium sauté pan over medium heat. Add the almonds and toast for 2–3 minutes, stirring often, until golden brown. Remove from the pan and set aside.
6. Add oil to the same pan. If the pan is too hot, reduce the heat slightly. Add the shallot. Sauté for 2 minutes, stirring occasionally.
7. Add the blanched green beans, garlic, and a pinch of salt to the pan. Cook for 2–4 minutes, until they’re tender and warmed through.
8. Remove the pan from the heat. Stir in the lemon juice. Toss to combine and adjust seasoning with salt and pepper.
9. Transfer to a serving dish. Top with the toasted almonds and serve warm.
