Leeks are the glorified allium in the family. They are gorgeous and full of flavor. You can eat more than just the white part of the vegetable too, despite some beliefs that all the green must be discard. Leeks are a great highlight in a risotto or a flavorful add to a soup. We also love them caramelized and topped on any sandwich or omelet!
