If you are scratching your head about how to prepare chard, never fear. Separate the stems from the leaves and use the leaves as you would any other salad green. The stems can be cooked down with some garlic and spices, or marinated in a vinaigrette before adding to your dish. Don't throw any of this gorgeous green in the compost! Swiss chard also does well when exposed to heat, so don't be afraid to cook down into a miso soup or a white bean stew.
